Yellow Tea

Yellow tea is a relatively rare form of tea production. It is the least common yet has a very unique profile that is worth exploring. This style lives somewhere beyond green and before black or oolong. The flavour profile may be similar to green, yet has the tendency to present slightly more nutty or with a hay-like flavour. Some are very floral in flavour as well, similar to a fine green tea, with vegatal and earthy notes.
Whereas as green teas are fired quickly to preserve the green, yellow teas undergo a bit of withering before they are pan fired at a low temperature, then it is sealed in a humidity controlled box for up to 42 hours. The result is a yellow tone to the leaves and steeped tea.
