Green Tea

Green tea in its most traditional form is composed of leaves harvested in the early spring. More specifically, the buds of the tea plant which are the brand new shoots that come out in the spring time. Green tea is meant to savour the sense of a new season, year, in a preserved form through the quick firing process of the leaves.
There are many styles of green tea production now, including buds, large leaves grown over the previous year or summer, blends of leaves and buds; fired immediately in woks or steaming (typically Japanese style).
Green tea preserves its colour by being processed very quickly after plucking, minimizing oxidation and any fermentation; which is how it maintains its green colour unlike black/red teas. It offers a range of flavour profiles, with prominent floral or vegetal notes, derived from the earth, or terroir, where the plants grow.
